PEPPERMINT ROUGH SLICE

One of my absolute favourite sweet treats. This slice will send you to a place of secluded indulgence (especially important for that 'me time' when surrounded by young kidlets) AND will just as equally, TEST YOUR WILL POWER for the rest of the day! Packed with Australian Macadamias, it's a nutty dream come true. This recipe is a masterpiece with only SIX INGREDIENTS, and if you're partial to the delightful combination of Peppermint and Chocolate, you'll be converted to an obsession! When I say it's my favourite, I'm certainly not alone... Eyes light up when teeth sink into that crunchy, smooth, creamy texture.

There's no offers made of: "Who wants the last piece?"... Ha Ha Ha Ha!... It's already in my mouth!




PEPPERMINT ROUGH SLICE

Makes: 1 loaf shaped ( 6cm x 20cm x 5cm deep ) slice
Preparation Time: 20 minutes
Setting Time: 1 hour
Fat & Calories: Who cares when you’re eating fantastically healthy… Come on!


Ingredients:

1 cup of Australian Macadamias
3 heaped tablespoons of Virgin, Cold Pressed, Organic Coconut Oil
30 small organic pitted dates
1/2 cup of organic Cacao powder
15 drops of Peppermint Essential Oil
2 cups of organic shredded coconut

Note: Stevia can be added to increase sweetness to taste.


Method:

  1. Add the Macadamias and coconut oil to a processor and blend until a nut-paste is formed.
  2. Add the dates, cacao, peppermint essential oil and shredded coconut to the processor and blend until everything is evenly combined. Try to process until the dates have been broken down quite well and the mixture has become a little runny due to the melted coconut oil.
  3. Line a rectangular container with baking paper. Press a sheet of baking paper into the container so that the paper overlaps the two longest container sides. This allows the entire slice to be lifted out of the container once set.
  4. Spoon out the mixture into the lined container. Smooth over the surface of the mixture with a spoon and place into the refrigerator to set for at least an hour.
  5. Lift the slice out of the container using the baking paper. Cut into rectangles for serving.
  6. Keep refrigerated until ready to serve as the slice will loose firmness when left out after an hour or so.
